Scotch Eggs

On Tuesday night I came up to my Mum and Dads for a few nights.  Mum asked if I'd come and help her sort out some insurance paperwork (they had a house fire this summer - long story, wouldn't wish it upon anyone!).  I'm going back to work on Monday, so I  thought some different scenery would be good.

Yesterday we got a good chunk of the paperwork done which I know if making Mum feel alot better.  This morning we had some left over sausagemeat so Mum and I made Scotch Eggs.  This is quite an English recipe, famous in the summertime to add to lunch boxes and picnics!  My late Grandma always used to make Scotch Eggs, so I enjoyed this mornings project reminicing about my Grandma!

Anyways... here it is! 



You start with 1lb of sausagemeat, which you add chopped green onions, fresh thyme, parsley & garlic. 



Toasted breadcrumbs for the crust


Hardboiled eggs - we used 4

Seasoned flour with salt & pepper

Split the sauseagemeat mixture into 4 egual parts - this is quite sticky so make sure your hands are well floured & keep adding as needed
 
Flatten out your sausagemeat
Roll your egg in flour

Shape the sausagemeat around the egg.  Roll it about lots, and make sure all the "seams" are closed & no egg is showing

Continue with the rest of the eggs

Next dip your eggs & sausagemeat into a beaten egg and coat

and roll in the toasted breadcrumbs making sure they are well coated


Place on a cooling rack over a baking tin and bake at 350 for 30 mins, turning at 15mins.

 Fresh out the oven!!  You can reshape them while they are still warm, as you can see the top left egg has lines from the wire rack.  We forgot this step!!
 
 End result!! Scotch Eggs... mmm!! 

 
Scotch Eggs Recipe
 
4 hardboiled eggs
1lb sausagemeat
2 green onions, chopped
couple spriggs of fresh thyme
small handful of fresh parsley
2 cloves of garlic, chopped
small dash of pepper
 
Combine sausagemeat with ingredients above and mix well
 
1 egg, beaten
1/2 cup of flour, seasoned with salt & pepper
1 cup of toasted breadcrumbs
 
Split sausagemeat into 4 egual parts
With floured hands, pat out sausagemeat into a circle
Coat egg with flour, and place into sausagemeat.  Form around egg, making sure there are no seams left.
Coat with beaten egg mixture, and transfer to breadcrumbs.  Make sure eggs are well coated & place onto cooling rack placed overtop of baking tin.
Continue with remaining eggs.
Bake at 350 for 30 mins, turning eggs half way through.
 
Perfect end to a busy morning with Mum... Jess cuddled up with me while I catch up on a few blogs!!  I love this little dog and miss her terribly!! But thats another story!

Never a dull moment!

So Boxing Day this year was kind of interesting for us as I had a little bit of a skidoo accident, and by little bit, I mean pretty dangerous.  I got a skidoo for Christmas from Kyle, so this was our first ride with my sister and fiance.  Without going into too much detail, I ended up with a broken foot.  I broke 2 bones in 3 places in the top of my foot, and had to have surgery the morning of the 27th. 


As you can see there's a large fracture in between the first and 2nd toe vertically, and a smaller one at the top at the top of the large fracture to the left.  And then on the 3rd & 4th toe there's a small "v" shape fracture.
They put wires in to secure it into place, gave me a pair of crutches and I was home by 1:30pm, which really didn't hurt my feelings much!! I'm off work till the beginning of February, and no walking for 8 weeks!! Grrrrrreat!!!!  For anyone that knows me, knows that this isn't all that fun to hang out on the couch, and not do anything!  Last week I was fairly active, using my office chair to kneel on and scoot around my kitchen which wasn't so bad.  On Monday I had an appointment to get my cast changed.  I was really intrigued to see what was under my cast, and it wasn't what I thought at all!!  

Hopefully no ones too squeamish but here's whats under the cast! 3 pins, one on the top, one of the left side, and one on the right. 

 



Now I'm sporting my pretty green cast!! 
 
Needless to say, I'm bored silly!! Today I got out my crochet hook and have got 2 side panels made for a tea-pot cozy for my brothers girlfriend.  That's the extent on my crocheting ha ha! Anyone need a teapot cozy!?! 
 
So I haven't had too much activity to post here!!  I have been elevating my foot and icing it the last few days, because I was very surprised at the swelling I still had!  The icing feels really good, as my foot feels quite constricted in this new cast.  This is my first broken bone, and I'm really hoping for another 26 years of no broken bones after I'm healed up!! Fingers crossed!!

Page 2 of 365... to New Beginnings!

2013... the year of new ideas, fresh beginnings, and tons in store for us! 

Well this is unofficially my first blog!  (I started one at the beginning of Decemeber and obviously didn't blog after the first entry, and now can't remember the email address I created!!)  So here we are, Page 2 of 365 of Book 2013. 

I want to start a blog to capture the happenings of our farming life around Roseland.  Kyle and I have just moved back to join his parents on their family farm in South West Manitoba.  Kyle is the 5th Generation to be inolved in the farm. Both Kyle and I grew up on a farm, its true what they say; farming is in your blood!  I love getting outdoors and helping with whatever needs to be done on the farm, but also love being a proud homeowner. I love cooking, and am getting better at baking!!  I work fulltime at a Financial Institution as an Account Manager, so juggle life as best I can. 

I love reading and learning from other peoples blogs, and think its a great way to keep intouch with friends we don't see nearly enough. 

So hopefully as my blog evolves, so do I as my dreams come true of being a farmers "girlfriend"... for the time being! ;-).
